Happy Birthday Kent!


Today is Kent's birthday. We didn't do much, as Kent requested that we not do much. I cooked supper and made him a cake and of course we did presents. While the cake I made is not the prettiest, it is my mom's Devil's Food Cake recipe and it is SO good. This is the cake I always request for my birthday. Here's the recipe:

2 Sticks margarine
4 Tablespoons cocoa
1 Cup cold water
2 Cups flour
2 Cups sugar
1 Teaspoon Salt
1 Teaspoon soda
½ Cup buttermilk
2 Eggs
1 Teaspoon vanilla

Frosting:
½ Stick margarine, melted
2 Tablespoons cocoa
3 Tablespoons buttermilk
½ Box or 2½ cups powdered sugar

Melt 2 sticks of margarine, add 4 Tablespoons of cocoa and 1 cup of water. Bring to rapid boil and pour over the dry ingredients and stir. Mix well and add ½ cup of buttermilk, 2 eggs and 1 teaspoon of vanilla. Pour into 9 X 13 greased pan (glass works best). Bake at 375 degrees for 15 or 20 minutes. Mix frosting ingredients well and spread on cake while still hot. Sprinkle with pecans, if desired.
